Lime Springs Beef, doing business as Upper Iowa Beef, is off and running!
Congratulations to all involved, especially Jesse Stevens, primary architect of the business.
The name “Upper Iowa Beef” was created several months ago. It was felt that would better represent the true nature of the major participants in the company and the source of the raw material. And of course it is a better marketing phrase. Almost everyone can envision “Upper Iowa” but few will know “Lime Springs.”
Jesse told me today that last week 180 head of cattle were butchered. That’s about 1/3 of the number which they plan to reach in a couple of months. Today he was at the plant and watched a semi full of Upper Iowa Beef leave for hungry customers in the Chicago or Minneapolis areas!
I bet there were many times when he wondered if such a day would ever come!! It did!
Currently, there are about 30 employees, with additions to the workforce scheduled for the coming weeks until about 60 are employed.
This new industry will bring several changes to Lime Springs and the area. Some will be challenging, while others will present great opportunities. My hope is that both will be met successfully.
